Hiyu 2016 Moon Dog
This wine is made from a .75 acre South facing bowl at the bottom of the vineyard's central hill. It’s one of the last Pinot Noir based parcels to ripen (two weeks later than Arco Iris) and makes the most dark, dense and aromatically exotic of these wines. This wine is aged longer in barrel than Arco Iris (the 2015 is still in a 1300L Cask!) and also demands additional time in bottle to show what is possible. This is the first time we’ve felt ready to release a bottling and it's an incredibly exciting moment. This has Grand Cru Burgundy level complexity, texture, balance and aging potential. It will give tremendous pleasure now, but should develop in an extremely interesting way for years to come.
