This is a half-acre field planted in “The May” to over 15 different southern Mediterranean white grapes, but primarily Assyrtiko, Fiano, Falanghina and Verdicchio. It was macerated on the skins for 5 days whole cluster, before being pressed by gravity into a single 350 liter cask. It was bottled by hand directly from cask.
