This is the palest of the red wines made from the own-rooted Pinot Noir and Pinot Gris planted on the central hill at Hiyu. Four barrels were made from two small fermenters. The grapes were sealed, whole cluster and un-crushed, in wooden vats for 40 days before being pressed.
