Hiyu 2017 Corvus Magnum
This is a small, one-acre, parcel located on a rolling plateau in the Northeast corner of the farm. The field blend is inspired by the Camino del Santiago and the Basque origins of Cabernet Franc. The origin of the grape is purportedly from the Abbey of Roncevalles that lies at the beginning of the Camino. The field also includes, Mencia, Brancellao, Manseng Noir and Abouriou, but the Cabernet Franc cuttings from Vieux Chateau Certan in Pomerol are the heart of the wine. This is the darkest and most powerful wine that we produce on the farm. In 2017 it spent over 50 days on the skins and almost three years in barrel, before being bottled by hand this past spring. It is captivating to drink now and develops tremendous minty complexity after being opened for a few days, but should age for a very long time.
